Tantalizing Tuesday 3/27/12

This past Saturday I made “Jag” a Portuguese dish I make quite often and that I love because it’s easy, quick, delicious, and last several meals for me and my husband. The added bonus is the meal actually tastes better the next day as the rice has time to absorb the juices from the Linguica. I am including the recipe here for you.

  • 2 Linguica (like Gaspar)
  • 1 Green Pepper
  • 1 Onion
  • Garlic cloves to taste (I love garlic so I use three large)
  • 3 C Minute Rice
  • Bag Frozen Green Peas (large)
  • 1 tsp salt
  • 1 tsp pepper
Chop onion and pepper into small pieces. Dice garlic. Pour some olive oil into the bottom of a dutch oven. Saute onion and pepper in the pan for a few minutes until soft. Add garlic. After one minute add linguica, salt, pepper and turn burner down to a medium high heat. Cover with lid. Stir occasionally. Linguica will create juices.In the meantime place peas in separate pan, add water and turn on to bring to a boil. After approximately 10 minutes Linquica will be heated, the edges will be curling and juices will be formed. Add 2 1/2 C hot water to the Linguica pan. Bring to a boil. Once boiling add 3C Minute Rice, stir and take off burner, cover and let sit for 10 minutes until rice absorbs juices. Once peas come to a boil drain and add to Linguica mixture. Stir and serve.

The great thing about this dish is it is one of those meals that is even better tasting as a leftover  because the rice has had longer to absorb all the juices! Just zap a bowl in the microwave! Yum!

(Great meal for a party. Prepare and throw in a crock pot to keep warm. Just don’t let dry out!)
